The estate vineyards destined for the production of this wine are located in Valtènesi on the hills of Soffaino in the area called "Sofai," which means under the beech trees.
In the shade of these trees, the farmers of the area used to have lunch during the summer months during the midday break and let the oxen rest.
The Soffaino hills are located in the area of Garda Bresciano on the western shore of Lake Garda, between Lake Lucone, a prehistoric basin that has become a UNESCO World Heritage site as an important archaeological site, and the Sovenigo Lakes, which represent the best example of an intermorainic basin of Garda, which in the months of July and August offer a unique spectacle when the waters are covered with the pink of lotus flowers.

Grape Variety
Groppello (100%), an indigenous grape variety of Valtènesi that finds in this climatic area an environmental situation suitable for enhancing its characteristics.

Production
From grassed-down vineyards, worked under the rows, cultivation without synthetic chemical products with the use of beneficial insects in the vineyard.
The productivity is 80 quintals per hectare.

Harvest and Winemaking
Manual harvest in small crates.
Traditional vinification in compliance with the CCPB regulations, fermentation at controlled temperature, which allows obtaining a soft wine with a delicate color.

13.00% vol.

Color              
Light ruby red with slight garnet reflections.

Aroma   
Vinous, fresh, similar to red fruits, raspberries and currants, slightly spicy.

Taste      
Velvety, savory, gentle, with a persistent almond finish.

Service and Pairing
Serve at 14° – 15°C with dishes based on grilled red and white meats, spare ribs with cabbage, flavorful cheeses, savory tarts, also suitable for snacks paired with typical local cold cuts.
