Baroldi - Garda Doc Spumante Extrabrut
PRODUCTION AREA: Morainic hills south of Lake Garda, municipality of Cavriana, Loc. Campagnolo.
SOIL TYPE: Morainic, sandy-pebbly, slightly calcareous.
ALTITUDE S.L.m.: 150-180 m. TRAINING SYSTEM: Guyot.
AGE OF THE VINES: 5 years, yield per hectare 90-100 4. GRAPE VARIETIES: Chardonnay 100%
HARVEST: Manual in crates during the third week of August.
VINIFICATION: Soft pressing of whole grapes, fermentation in steel at a temperature of 14-16°, racking and aging on fine lees for 8 months, with periodic batonnage.
SECONDARY FERMENTATION: Bottling (tiraggio) in the spring following the harvest, refermentation in the bottle with selected yeasts, and aging of at least 40 months before manual disgorging. Marketing after 2 months.
ANALYTICAL DATA Alcohol: 12.5% vol. Total acidity: 6.7 - 6.9 g/l pH: 3.03 - 3.10 Residual sugar: About 4 g/l
COLOR: Pale yellow with greenish reflections. Fine and persistent perlage.
AROMA: Broad and delicate, with fragrant hints of tropical fruits, yeast, and bread crust.
TASTE: Fresh, dry, pleasantly harmonious. The finish is delicate, slightly fruity, and with good salinity.
