Harvest: in 15 Kg boxes in the second week of September
Vinification: Soft pressing of whole grapes in an open membrane press. Static cold clarification for 24 hours. Racking and subsequent inoculation of selected yeasts and fermentation in stainless steel at a controlled temperature for about 12 days.
Aging: in stainless steel, on its lees until bottling.
